Blackened Fish Tacos with Cabbage Mango Slaw

Blackened cod fish seasoned with a spicy rub and cooked in a cast iron skillet. The mango-cabbage slaw is the perfect balance of sweet and sour which compliments the fish perfectly. I served these for dinner last night with some guacamole on the side (not pictured here) and my husband was a very happy man.

I cooked the whole thing outside on the grill which is a great way to keep the fish smell out of your house, but you can also do this indoors on the stove. The only thing that would have made this meal better would probably be a margarita on the side. Hope you enjoy!

With Cinco de Mayo right around the corner I have been thinking about Mexican cuisine a lot and a common side for Mexican themed meals is rice. I know what you are thinking but rice does not have to be boring since you can easily jazz it up with fresh ingredients with one of my favourites being cilantro and lime rice! I make cilantro and lime rice fairly often but I recently had an idea, why not add some creamy avocado to the rice? Avocado is the perfect complement to the cilantro and lime flavours, it's nice and green, light, fresh and it really takes the rice to a whole new level! This avocado cilantro lime rice is an amazing side to any meal and it also works really well in things like burritos, salad bowls, casseroles, etc. The next time you are going for rice as a side dish skip that Chipotle copycat cilantro and lime rice and go for this avocado cilantro lime rice!

Barbacoa Tacos

I really enjoy a nice slow braised meat dish since the long braising time makes the meat melt in your mouth tender and really brings out it's flavour so when I was thinking about recipes for Cinco de Mayo beef barbacoa immediately came to mind! Although the cooking style has changed from the traditional fires and pits to modern stoves, ovens and even slow cookers this dish is tasty no matter which way you make it! This dish is super easy to make, you pretty much just brown the meat add some liquid along with the seasonings and simmer, bake or slow cook until the meat is falling apart tender before shredding and enjoying in tacos, burritos, quesadillas, etc. The primary seasonings are chipotle chilies, cumin, oregano, garlic, lime juice and a touch of cloves that adds an amazing aroma and that hint of something exotic. Despite being so simple the long slow braise makes this dish truly amazing! It's so good that I often find it difficult to not gobble it all up by the fingersful before it even makes it into the tacos! Speaking of tacos, I always like to enjoy a fresh batch of beef barbacoa in tacos simply dressed with tangy onions and cilantro to let the barbacoa flavour shine!

Grilled Chicken Tacos with Lettuce Slaw, Avocado and Cotija

Grilled chicken tacos piled high with a lettuce-tomato slaw, avocado, and Cotija cheese all served on a charred tortilla. A quick weeknight dinner solution!

We love taco Tuesdays in my house, and I'm not talking about the taco's that come in a kit! Instead I make all kinds of tacos from scratch, from fish, to slow cooker chicken, and sometimes we even use picadillo in our tacos. These grilled chicken tacos are a wonderful addition to our taco rotation, and perfect to make outside on the grill now that the weather is warming up. I set all the fixins out on the table and let everyone make their own. You can double or triple this if you want to feed a crowd. If you don't have an outdoor grill, no worries! A grill pan works just as good. If you prefer to skip the tortilla, just turn this into a great big salad!
